Russian Marshmallow Flowers with Monica Cavallaro

Excited to welcome Monica Cavallaro of Moreish Cakes to Brisbane for two small, in-person Russian Marshmallow classes.
Monica is a pastry chef, cake designer, international teacher and former Great Australian Bake Off finalist, with years of experience teaching bakers both here in Australia and internationally.
Russian marshmallows are beautifully light and airy, but there is a little more to getting them right than simply following a recipe.
Much like macarons, timing, consistency and technique matter.
During this hands-on class, Monica will take you through the process step by step, sharing the little details that make the difference.
You’ll explore both hand-piped marshmallow flowers and working with moulds, including the differences between the two techniques and when you might choose one over the other.
Each session is limited to just six people.
The classes will be hosted in a private home in McDowall, QLD, creating a relaxed, intimate setting where you can see what Monica is doing, ask questions as you go and receive individual help.
No standing three rows back trying to work out what just happened.

Do I need experience?
No. Monica will take you through the process step by step.
If you have made macarons, marshmallows, cupcakes or piped flowers before, some of the techniques may feel familiar, but prior experience is not required.
Is this a hands-on class?
Yes.
This is a small, hands-on class rather than a large demonstration, which is why numbers are capped at only six people per session.
What will we learn?
Monica will guide you through making Russian marshmallows and the techniques involved in achieving the correct consistency and finish.
You’ll also work with piped flowers and moulded marshmallows, learning how the two methods differ and the possibilities each gives you.
Why pipe Russian marshmallows instead of just using moulds?
Moulds are wonderful for producing a consistent, defined shape.
Hand piping gives you much more creative freedom. Individual petals can be shaped and layered to create flowers with movement, variation and personality.
Learning both means you aren’t limited to one style.
What do I need to bring?
We’ll let you know before the class if there is anything specific you need to bring.
Otherwise, come ready to learn, ask questions and play with marshmallow.
